This is one of my favourite lunches to make when I want something quick, satisfying, and packed with raw veggies. I can’t believe I’ve never posted it on the blog!!
Dallas came home from class the other day at lunch time & opened the pretty much empty fridge. Thinking on my feet, I told him I could make a yummy lunch for him in about 10 minutes flat. I’ve made this many times before for myself and at work, but never for Dallas. These are also really fun for a group, because everyone can assemble their own & create them how they want. Moment of truth:
I stirred together the peanut sauce ingredients and let the mixture sit. The flavours blend really well together this way!
I cooked brown rice vermicelli on the stove. It’s actually very quick! All you have to do is bring the water to a boil and cook the noodles for 1-2 minutes. Drain the water and noodles are ready! Much less time than rice or pasta, because the noodles are so thin & delicate. I love vermicelli <3
I sliced up some red peppers, spiralized some carrot & zucchini, and grabbed a handful of spinach.
After thoroughly wetting a rice paper wrap under warm, running water (they come dry and stiff in a package), I loaded it with vermicelli, veggies, & peanut sauce.

…then rolled it all up!
We each ate two of these. Dallas really liked them, and enjoyed the abundance of veggies. We’ve been eating some heavy food lately Vegan, but heavy nonetheless.
Feel free to add in any veggies you like, but make sure to grate, spiral, or slice them thinly. Mushrooms and avocado are particularly tasty in these wraps, too. Experiment, have fun, get crazy

Ingredients:
For the peanut sauce:
3 tbsp natural peanut butter
1-2 tbsp Bragg’s
1 tbsp rice vinegar
1 tbsp sesame oil
2 cloves garlic, minced
1/4 tsps ground ginger
1/2 package brown rice vermicelli noodles
4 rice paper wraps
veggies of choice, sliced thin
Directions:
1) Prepare brown rice vermicelli noodles according to package directions. Drain water and set aside.
2) Mix together peanut sauce ingredients. Stir well and set aside.
3) Wet one rice paper wrap using warm, running water. Make sure to coat all sides, until wrap is soft and pliable. Gently set on a large plate.
4) Add vermicelli noodles, peanut sauce, and veggies to the center of your wrap. Fold in both sides, then roll up like a burrito. Tada! First one is done!
5) Repeat process for remaining wraps. Serve immediately.
